Trail to Table is an immersive academic experience that uses Bariloche and Patagonia as a real-world business ecosystem to explore how tourism, artisanal food production and emerging agribusiness create value through regional value chains, commercial channels and territorial branding.
The program combines academic preparation in Buenos Aires with three days of field immersion in Bariloche, where students explore tourism and hospitality, artisanal chocolate production, berry agribusiness and retail. Through field visits, guided observation, executive encounters and experiential activities, students connect commercial strategy with the economic, cultural and productive realities of Patagonia.

Students apply the 5S Observation & Insight Generation Methodology during tourism and farm visits, guided field observation, executive workshops, retail visits and tastings.
The field experience explores how Patagonia connects tourism, hospitality and regional food production with commercial channels, sustainability, innovation and international positioning. Students then return to Buenos Aires to transform their field observations into strategic analysis and a final project.

Field Immersion
